Lord Chambray set up shop in Gozo after a €1 million euro investment just a few years ago, and has spearheaded the local beer movement to greater heights. The company chose to set up in Gozo specifically – they say the water is better there – and have created these gloriously dry English IPA that has proven popular with the Maltese. Water is the main ingredient in beer and usually makes up between 90 and 95%, depending upon the alcohol content. As a result, the quality and minerals of the water used in beer-making wields a strong influence over the final flavor.

Bigilla– A dark coloured broad bean or fava bean dip a bit like hummus, that’s scooped up with water biscuits and eaten as a starter. Since the fish are caught young in Malta, the lampuki flesh is considered very tender and tasty. Eat this fish simply cooked or in the Maltese favourite dish of Lampuki Pie (Torta Tal-Lampuki), where the fish is combined with olives and vegetables. In 1928, a Maltese entrepreneur by the name of Lewis Farrugia, together with his sons, launched Malta’s first local beer: Farsons Pale Ale. Almost 60% of Malta’s fresh water comes from ocean water desalination. However, the water that emerges from the tap is still slightly briny and is not ideal for beer production. This forces brewers to invest in additional reverse osmosis filtration equipment.

Internationally Sourced Hops and Malt

The vegetables traditionally grown on Malta are typical of those in the Mediterranean. However population growth has reduced the amount of land on Malta that’s available for farming and much of the food including fresh vegetables is now imported. Look out for these traditional Maltese dishes that are vegetable based, often eaten as a starter before the main dish. Lampuki are the most popular fish in Malta, known elsewhere in the world as Dolphin fish, Dorado or Mahi Mahi. The fishing season starts on the feast of Santa Marija on 15 August, when Lampuki migrate through Maltese waters, continuing until December.

However, despite Cisk’s success, there is growing demand for new flavors and options. It is a demand driven by expats moving to Malta and a thirsty tourism industry. The Importance of Water in Beer-Making Just as strolling the streets of Valletta, Mdina and Victoria are part of getting to know Malta and Gozo, trying traditional Maltese food and drink is a key element of the experience. That’s down to the domestic consumption of Maltese wine leaving little left for export. It ranges in character from fruity whites to robust reds. The most commonly found dishes in Maltese restaurants are cheese and meat platters, pizza, pasta and seafood. There are a lot of very good Italian restaurants in Malta, unsurprising as the island is so close to Sicily.
